Southern Food: Seasonings

Posted in Healthy Eating by Lonnie Simmers on July 18, 2011

Most southern food dishes and recipes have a distinct flavor, due to the seasonings used. Which seasonings will you find in authentic southern food? Why is most southern food so highly seasoned? I’ll answer the second question first. The reason most southern recipes are so savory and/or spicy is because most southern foods started out as food that was eaten by poor people – slaves, poor whites, immigrants to the South, and poor free blacks. Since they couldn’t afford “fancy food,” they made the best of what they had and added seasonings to vastly improve the taste of sometimes inferior foods.

Now I’ll answer the second question. Some of the most popular seasonings found in southern foods are animal products: lard, bacon, bacon grease, chicken broth, ham, ham hocks, and pork neck bones. Healthier options like onions, garlic, celery, bell peppers, and hot peppers are also used extensively. Hot sauce, pepper vinegar, Worcestershire sauce, and Liquid Smoke are very popular, too. The most common herbs and spices found in southern food include black pepper, red pepper, chili powder, poultry seasoning, red pepper flakes, mint, dill, sage, rosemary, cumin, cinnamon, ginger, cloves, and nutmeg. Sweetening agents common in southern food are white sugar, brown sugar, cane syrup, honey, molasses, and Karo syrup.

Construction Vehicles

There are several different types of construction vehicles, and each one has its own special purpose. Construction vehicles might also be referred to as heavy equipment or engineering vehicles. The major types of construction vehicles include dump trucks, excavators, bulldozers, graders, front-end loaders, and backhoes. There are other specialized types of construction vehicles, too, but these are the ones most frequently used for general construction jobs.

Dump trucks – Dump trucks carry materials to and from work sites. This might include rocks, sand, or rubble. A lift mechanism raises the truck bed so that the contents of the truck can be “dumped.”

Excavators – Excavators have a large arm and a bucket that’s used for digging, dredging, landscaping, and moving heavy materials.

Bulldozers – Bulldozers are construction vehicles with a heavy metal blade attached to the front. Bulldozers are used for moving materials by pushing them. Bulldozers come in different sizes, and smaller models are sometimes referred to as “calfdozers.”

Graders – Like bulldozers, graders have a metal blade that’s used to push and scrape. Graders are generally more precise than bulldozers and are often used to create flat surfaces for roads, fields, and construction pads.

Front-end loaders – Front loaders are equipped with a large scoop on the front that’s capable of removing loose materials from one place to another. Front loaders can also be equipped with special attachments like grapplers for lifting specific items.

Backhoes – Backhoes are equipped with a large digging arm and a front loader. These construction vehicles can be used for a wide range of jobs, including general construction, stump removal, plumbing, and farming.

American Recipes: Boiled Shrimp

Posted in Uncategorized by Lonnie Simmers on June 18, 2011

Do you like American recipes for shrimp? First of all, in the United States, it’s “shrimp.” Few ordinary Americans refer to the sea creatures as “prawns.” At least, in the South we don’t. To us, shrimp are shrimp  – regardless of size. Oh, we use different sizes of shrimp, but we call them salad shrimp, small shrimp, medium shrimp, large shrimp, extra-large shrimp, jumbo shrimp, and colossal shrimp. I’ve never heard an American say, “Let’s throw some prawns on the barbie.”

One of the most popular American recipes for shrimp is boiled shrimp. You can use a commercial shrimp or crab boil, but I prefer to use my own seasoning blend sometimes. I know that some cooks peel their shrimp before boiling, but that tends to make the shrimp tough, so I leave the shells on. And, by the way, boiled shrimp is a low calorie and low-carb recipe!

Boiled Shrimp recipe

Ingredients:

  • 2 quarts water
  • ½ cup cider vinegar
  • ¼ cup lemon juice
  • ¼ cup lime juice
  • 2 tablespoons salt
  • 1 tablespoon paprika
  • 2 teaspoons black peppercorns
  • 2 teaspoons ground red pepper
  • 2 teaspoons garlic powder
  • 2 teaspoons celery seed
  • 2 teaspoons mustard seed
  • 3 bay leaves
  • 1 medium onion, cut into chunks
  • 2 pounds large fresh shrimp, heads removed

Directions: Add all ingredients except shrimp in a large pot and bring to a boil. Boil for five minutes. Add shrimp and continue to boil for about three minutes, until shrimp are pink. While shrimp are boiling, stir from the bottom of the pot up.

Drain shrimp in a colander. Eat them hot, or chill in the fridge.
